I have always enjoyed cooking and baking, whether I'm making savoury or sweet snacks, delectable desserts, beautiful breads, exquisite cakes, or wholesome meals. I remember when I was about 5 years old, the first thing Mama taught me to make was tuna mornay with rice and steamed vegetables - a simple but wholesome meal. Then when I was about 9 years old, she taught me how to bake bread - the Jewish bread challah was the first bread I made.
I've always especially loved to cook and bake sweet things. I first made the vanilla part of this dessert about three and a half years ago. It was inspired by my adopted Oma, who was a chef for many years and has that amazing ability to whip up anything in the kitchen with no recipe and no measurements. She always talks about how she just adds a bit of this and a bit of that, and it always turns into the lightest, fluffiest cake or a deliciously savoury dish!
Then later the same year, I used the same principles to make the chocolate part of this recipe. I've often thought of combining the two to make a rich dessert, but it was only earlier this month that I actually put my idea into practice - and it was just as good as I had hoped!
The Ingredients
I use both milk and cream in this recipe because it makes it both richer and creamier. I usually use duck eggs, but you can use a large chicken egg instead. And the honey makes it healthier - there's no other sweetener in this recipe!
Rich Dark Chocolate & Vanilla Dessert
Ingredients:
Vanilla Pudding
600ml milk
400ml cream
2 tsp vanilla bean paste
¼ cup honey
1/3 cup cornflour
¼ tsp salt
1 large egg
Dark Chocolate Pudding
1/3 cup honey
1 tsp vanilla
¼ tsp salt
1 large egg
400ml cream
600ml milk
½ cup cocoa powder
1/3 cup cornflour
Topping of your choice: cinnamon, cocoa powder, chocolate shavings, 100s & 1000s, mint leaves, sliced strawberries or other fruit...
Directions:
Vanilla Pudding
Heat milk, cream, vanilla, and honey in a large saucepan over medium-high heat.
Meanwhile, in a separate bowl, whisk together the cornflour, salt and egg into a paste.
When the milk is steaming but not boiling, add a small amount of the warm milk to the egg mixture, whisking constantly. Pour the egg mixture into the pan with the warm milk and cook on medium-high heat, continuously whisking, until thickened. Set aside while making the chocolate pudding.
Dark Chocolate Pudding
Place honey, vanilla, salt, egg, and cream into a large saucepan and whisk together. Whisk in milk.
In a small bowl, whisk together the cocoa powder and cornflour.
Add powders to saucepan and whisk vigorously until the powders are mixed in. Heat over medium-high heat, whisking constantly, until thickened.
Dessert
Scoop vanilla and chocolate puddings into eight 1-cup dessert glasses or a large dessert bowl, alternating layers of vanilla and chocolate as pictured. Finish with a vanilla layer, and sprinkle with topping of your choice.
Refrigerate until chilled, and serve cold.
Cooking time: 40 min. plus chilling
